    * 1 cup ricotta cheese
    * 3 ounces cream cheese
    * 1 teaspoon almond extract
    * 2 tablespoons Agave syrup
    * 8 eggs
    * 1 cup half and half
    * 1 tablespoon butter
    * 1 package Deluxe Red Raspberries
    * 2 tablespoons raspberry jam

   1. In a medium size bowl, mix up cream cheese, ricotta, almond extract and half of the Agave syrup and stir it up until the mixture is well-blended.

   2. Make a small pocket in each bread slice by cutting through the center down into the bred within an inch from the edges, but try to avoid cutting through the sides.

   3. Fill the pocket with 1 tablespoon of the filling and repeat this for the remaining bread slices.

   4. In a medium bowl, mix up the eggs with the half and half until they blend well. Then dip each side of the bread into the mixture until it gets well coated.

   5. In a medium-heated pan, melt some butter and place the bread slices into the skillet frying both sides until they get a golden color and the filling gets warm.

   6. Combine the remaining raspberry jam and Agave syrup in a medium-sized saucepan while stirring in the raspberry jam. The mixture should start to boil at which point you should lower the heat and simmer for around 6 minutes, so that the mixture can thicken slightly. Remove it from the heat and stir in the raspberries.

   7. Spread the resulting mixture on a bread slice and sandwich it with another French toast on top. Cut the French toast sandwich diagonally in two. Serve Warm on a plate.
