Vegetables In Spinach Wrap 1 rating: 0 review:

    * 1 spinach tortilla
    * 4 slices of Roma tomatoes
    * 2 slices of ripe avocado
    * 10 baby spinach leaves
    * 2 tablespoons Mexican cheese (Queso Anejo)
    * 1 slied bacon
    * 1/8 cup shredded carrots
    * 1/8 cup sredded red cabbage
    * 1/2 cup cooked and sliced chicken breast
    * Small side of salsa

Lay the spinach tortilla flat and place the following ingredients, in the order given, down the entire length of the center of the tortilla: tomatoes, cabbage, spinach, avocado, cheese, bacon, chicken. Flip the ends of the tortilla laying them on the end of the filling, so that the filling won't spill as you being to roll the tortilla. Now start rolling one of the tortilla's ends toward the filling the keep on rolling until the entire filling is rolled up.

Now it's time to heat up the griddle or a pan to medium heat (not high in order to preserve the vitamins in all vegetables) and place one of the tortilla's ends directly over the heat. When it becomes slightly browned, turn it over and after that, repeat the same operation for the other side.

This recipe is really easy and it doesn’t take much time either, while it’s perfect for breakfast or a light lunch. It’s really healthy as 80% of the ingredients are just fresh vegetables to provide your body with a range of vitamins and minerals, and the bacon and chicken in it will give the proteins that your muscles need. Serve on platter along with the salsa in another cup. Your kids will definitely love this one, and if you are having a hard time making them eat their vegetables, well with this “vegetables in spinach wrap” recipe, you won’t have hard tome convincing them. Besides looking quite attractive and presentable, this meal is also nutritious and easy to digest.
